1. Oxygen radical Absorbance Capacity

In connection with my doctoral studies (in Food Safety) I was aware that was established in the academic scientifically of Romania (Europe), a measure of antioxidant power of plant called ORAC  (Oxygen radical Absorbance Capacity), depending on the amount of anti-oxidants that is contained in various plants. To keep in shape of full health, but not to do cancer, a man must enter daily  into the body an amount of plant that would ensure optimal > 5,000 ORAC units / day, but with the condition of significant lack of pro-oxidant factors compounded by food  !

In special situations (degenerative diseases, acute diseases, cancer, lymphoma, leukemia, AIDS), Romanian experts recommend insuring 30000-50000 ORAC units / day (or even more)! 2. Comments on the ORAC scale:

– There is no animal food in this scale! It is the first and perhaps most important notes! Yes, there are a number of foods of animal origin (meat of salmon and some marine crustaceans), which contain small amounts of a potent  carotenoid  (asteroxantina) that color their flesh on orange-reddish, but these foods are not found the list;

– Spices are the first in the list, even occupying the first and third place on the podium;

– Is not enough that food containing „Resveratrol”, to have high anti-oxidant levels. Cloves contain „eugenol”, a average potent anti-oxidant, but in an so large amount that crush any candidate against the anti-oxidant level;

– There are foods that provide huge anti-oxidant levels, even if consumed in very small quantities (cloves, cinnamon, etc), while others have a smalll anti-oxidant level, even if we consume significant amounts (watermelon, yellow cucumbers, etc.);

– Cloves and cinnamon are extremely accessible, virtually everywhere. But unfortunately too many of us choose to use rarely or only in cakes. Same with  carob powder (carob, Ceratonia) that much of the population has not even heard, or pollen grains, possibly used by beekeepers and their families.

What are the pro-oxidants factors that we must beware? Smoking (cigarette generates RL 1016), stress, air pollution with smoke, industrial dust, exhaust gases, ionizing radiation (UVR, radiation and X-rays, atomic explosions, cosmic radiation, CT, PET-CT), positive ions generated by the screen PC or TV’s, acetaldehyde (an intermediate product of alcohol metabolism, that appears also in cigarette smoke), stress, pro-inflammatory conditions, alcohol, energy metabolism (mitochondrial oxidation) unexpected physical exercises (if more intense – more free radicals generated) wrong ways of food thermal preparation (fried steak, „barbecue”), eating rancid or altered, concentrated sweets, vegetable oils, big amounts of refined omega 6 and omega 3, some margarines, overexposure to sunlight and / or maximum hours of solar and artificial tanning, sources of atomic oxygen (hypochlorites, ozone, dichromates, permanganates, chlorates, perchlorates, iodized salt), some oxidizing agents used in the food industry, some too high amounts of food preservatives (nitrates, nitrites, sulfates, tiosulfaţii, sulfites, phosphates, metabisulfaţii, phosphites, phenoxy radicals), some toxins, some bacteria and viruses are incriminated as generating free radicals, cytostatics, 3 0.4-benzpirenul, methylcholanthrene, excess weight, diabetes, occupational exposure to some metals heavy radioactive, the mobile phone, microwave ovens, unsaturated aldehydes (acrolein resulting from frying oils or smoking), etc.

Free radicals induce lipid peroxidation, that injure cellular DNA, inactivating / distorting proteins. The most sensitive (and therefore most vulnerable) organs to free radicals are the eye lens (cataract), pancreas (diabetes), blood vessels (atherosclerosis), and nerve cells, which have low capacity and limited inactivation feed-back. All cells and organs of our body suffers when is part of increasing pro-oxidation and on the contrary, it works better to have a high level of anti-oxidant.
